Every fall, I buy fresh ginger with big plans for soup, then two weeks later I’m peeling away something that resembles a dried-up twig. Once I learned this simple strategy, I stopped wasting money and flavor. How to store fresh ginger comes down to the timeline you need: about three weeks in the fridge or up to six months in the freezer.

A good start matters for both routes. Pick a root that feels dense and firm—no soft spots, no shriveled skin. If you’ve already cut into a piece, pat the cut end dry and trim away any bruised areas. Moisture invites mold, so begin with completely dry ginger. I usually leave a new paper towel folded under the root while I gather my bag.

You’ll need:

  • Fresh, unpeeled ginger
  • Paper towels
  • A zip-top bag or reusable storage bag
  • A freezer-safe bag or small airtight container
  • A box grater or microplane (if you plan to cook from frozen)

How to store fresh ginger, step by step

  1. For short-term use — the fridge: Place the whole unpeeled root in a zip-top bag, add a dry paper towel to absorb moisture, press out most of the air, and seal. Put it in the crisper drawer. If the paper towel feels damp after a few days, swap in a fresh dry one.
  2. For months ahead — freeze whole peeled chunks: Peel the root, cut it into 1-inch chunks, and place the chunks in a freezer-safe bag. Press the air out, seal, label, and freeze. Frozen ginger is easy to grate directly into a hot pan—no thawing necessary.
  3. For ready-to-use portions — freeze grated scoops: Peel the ginger, grate it, then drop rounded teaspoons onto a parchment-lined baking sheet. Freeze until solid, about 1 hour, then transfer the little scoops to a freezer bag. Grab a scoop or three whenever a recipe calls for fresh ginger.

🥶 Note: After freezing, ginger’s texture turns softer once thawed, but its bright flavor stays. Use frozen ginger in cooked dishes, marinades, or tea—save the fresh days for raw salsas where crunch matters.

Choose the method that matches your cooking habits, and stop letting that handsome root turn into a sad, leathery relic. With dry storage and a clear plan, your ginger will be ready whenever you are—no root-left-behind guilt.
