A mug of tea can go from calming to harsh and bitter when it steeps too long or sits in water that’s too hot. The fix isn’t better tea or fancy gear; it’s getting the basics right. Learning how to steep tea really just comes down to three things: water temperature, the amount of tea, and timing.
What you’ll need
- Tea you like — loose leaf or bags
- Fresh cold water, preferably filtered
- A kettle or small saucepan
- A mug or teapot and a timer
- A fine-mesh strainer, if you’re using loose leaf tea
How to steep tea, step by step
- Heat fresh water to the right temperature. Green and white teas are delicate, so aim for 170–185°F. Black and herbal teas do best with a full 212°F boil. No thermometer? Boil the water, then let it sit for two minutes before pouring it over green or white tea.
- Warm your mug or teapot. Swirl a little hot water around the pot or mug, then pour it out. This keeps your tea at a steady temperature while it steeps.
- Measure the tea. Use one tea bag or about 1 teaspoon of loose leaf tea for every 8 ounces of water. Need it stronger? Add more tea instead of steeping longer.
- Pour and set a timer. For most black teas, 3 to 5 minutes is the sweet spot. Green tea needs less: 2 to 3 minutes. Herbal and rooibos teas can go a little longer, about 5 to 7 minutes.
- Remove the tea promptly. Lift out the bag or infuser with a gentle shake. If the leaves stay in the water too long, your tea will keep getting stronger and more astringent.
⏱ Note: Most tea is ruined by staying in the water too long, not being “too weak.” For your first cup, choose the shorter time listed above and taste from there. It’s easier to make tea stronger than to fix an oversteeped mug.
Once you find the rhythm, the whole process takes less than five minutes, and the payoff is a cup that tastes the way you actually want it to. Trust the timer, trust the temperature, and adjust until it feels like yours.
