Shepherd's Pie With Instant Potatoes

Shepherd's Pie With Instant Potatoes

When you're craving the cozy comfort of shepherd's pie but don't have the energy to boil and mash a pot of potatoes, instant potato flakes are a genuine friend. This shepherd’s pie with instant potatoes keeps all the familiar goodness—a savory lamb and vegetable filling under a light, fluffy mash—while cutting prep time in half. It comes together in one oven-safe skillet and bakes while you set the table.

Ingredients

  • 2 teaspoons neutral oil, such as canola or olive
  • 1 pound ground lamb
  • 1 small yellow onion, finely chopped
  • 2 medium carrots, peeled and diced small
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 cup low-sodium chicken broth
  • 1 cup frozen peas
  • 1 (4-serving) package instant mashed potato flakes
  • Milk, butter, and water as needed to prepare the flakes
  • Salt and freshly ground black pepper

Method

  1. Preheat the oven to 400°F. Warm the oil in a 10-inch cast-iron skill or another oven-safe pan over medium-high heat.
  2. Add the ground lamb, season with salt and pepper, and cook, breaking it up with a wooden spoon, until browned, about 6–8 minutes.
  3. Lower the heat to medium and add the onion and carrot. Cook, stirring occasionally, until the vegetables soften, 5–7 minutes.
  4. Stir in the tomato paste and Worcestershire sauce and cook for 1–2 minutes. Pour in the broth, raise the heat, and simmer until the liquid reduces by about half, 5–6 minutes. Stir in the peas, then taste and adjust the seasoning.
  5. While the filling simmers, prepare the instant mashed potatoes following the package directions. Aim for a soft mash that will still hold its shape; if the flakes look dry, add a splash more milk.
  6. Drop large spoonfuls of mashed potato over the filling, then spread gently with a spatula without pressing too hard. Run a fork across the top to create little peaks that will brown nicely.
  7. Bake until the filling is bubbly and the potato top is lightly golden, 15–20 minutes. If you want extra color, place the pan under the broiler for 1–2 minutes, but keep an eye on it.

Leftovers keep well in an airtight container in the fridge for up to 3 days; reheat in a 350°F oven for about 15 minutes to keep the topping fluffy.

🌿 Note: Traditional shepherd’s pie is made with ground lamb. If you swap in ground beef, the dish is properly called cottage pie—still delicious, just a different name.

This version gives you all the slow-cooked flavor without babysitting a pot of potatoes, and it’s perfect for a weeknight when you need dinner to feel generous. Serve it with a crisp green salad, and don’t be surprised if everyone reaches for seconds.
