Delicious Cookie Recipes

The weeknight cookie craving is real, and we all need a dependable answer for it. These delicious cookie recipes are built on one base dough that comes together with pantry basics, takes about 30 minutes from mixing to cooling rack, and adapts to whatever you’re in the mood for.

This is the recipe to keep in your back pocket. It makes about 18 cookies using a two-tablespoon scoop, and the scooped dough freezes beautifully for last-minute baking.

  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  1. Heat the oven to 350°F and line a baking sheet with parchment paper.
  2. Whisk the flour, baking soda, and salt together in a small bowl.
  3. In a larger bowl, beat the butter and sugar with an electric mixer on medium speed until light and creamy, about 2 minutes. Beat in the egg and vanilla until combined.
  4. Add the dry ingredients and mix on low just until no streaks of flour remain. If you’re adding mix-ins, fold them in now with a spatula.
  5. Scoop rounded two-tablespoon portions onto the prepared sheet, spacing them about 2 inches apart.
  6. Bake for 10 to 12 minutes, until the edges are lightly golden. The centers may look slightly soft; that’s exactly right. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.

🍪 Note: Overmixing makes cookies tough. Stop stirring as soon as the flour disappears.

Three Easy Variations

  • Chocolate chip: Fold in 1 cup semisweet chocolate chips, plus 1/2 cup chopped toasted walnuts if you like. Press a few extra chips onto the tops before baking.
  • Lemon-poppy seed: Add 1 tablespoon grated lemon zest and 1 tablespoon poppy seeds with the vanilla. This version is lovely with a dusting of powdered sugar once cooled.
  • Spiced brown sugar: Swap half the granulated sugar for packed brown sugar, and add 1 teaspoon cinnamon, 1/2 teaspoon ground ginger, and 1/4 teaspoon nutmeg.

Baked cookies keep in an airtight container at room temperature for up to three days. To freeze the dough, scoop it into balls, freeze them on a parchment-lined sheet pan, then transfer to a zip-top bag. Bake from frozen and add 2 minutes to the baking time.

Cookie baking does not have to be a production. Make this dough once, choose a variation, and enjoy the smell of fresh cookies filling your kitchen—with the next batch already waiting in the freezer.
