Some evenings call for dinner that tastes slow-cooked even when you’re short on time. This curry coconut sauce does exactly that: it’s ready in about 20 minutes, made with ingredients you can easily keep on hand, and it turns plain chicken, tofu, or vegetables into a comforting meal.
Ingredients
- 1 tablespoon coconut oil or another neutral oil, like canola
- 1 shallot, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon finely grated fresh ginger
- 2 tablespoons Thai red curry paste, or 1 tablespoon curry powder for a milder spice
- 1 can (13.5 oz) full-fat coconut milk; light coconut milk will make the sauce thin
- 1 tablespoon fish sauce, soy sauce, or tamari
- 1 teaspoon brown sugar or maple syrup
- Fresh lime juice, to finish
Method
- Warm the oil in a small saucepan over medium heat. Add the shallot and cook, stirring occasionally, for 3 to 4 minutes, until soft.
- Stir in the garlic, ginger, and curry paste. Cook for 1 minute, stirring constantly, until very fragrant.
- Pour in the coconut milk, scraping up any browned bits from the bottom of the pan. Stir in the fish sauce and brown sugar.
- Lower the heat and simmer gently, uncovered, for 5 to 7 minutes, until the sauce thickens slightly and coats the back of a spoon. Taste, then add lime juice a little at a time until the flavor tastes bright and balanced.
💡 Note: Keep the heat at a gentle simmer, not a rolling boil. High heat can make the coconut milk separate or look grainy. If that happens, whisk in a spoonful of warm water or broth.
Ways to use and store it
This sauce is flexible by nature. Stir in a spoonful of peanut butter after the coconut milk for extra richness, or add a handful of baby spinach at the end and let it wilt. If you don’t have fresh ginger, substitute ½ teaspoon ground ginger.
Store the cooled sauce in a glass jar in the fridge for up to 5 days, or freeze it flat in a zip-top bag for up to 3 months. It also makes a quick soup base when you add broth and leftover vegetables.
The real beauty of this curry sauce is how reliably it turns everyday ingredients into something you’ll look forward to. Make it once, and you’ll have your own variation memorized — which is the point: a warm, easy meal, no fuss.
