Crock Pot Shepherd's Pie

Crock Pot Shepherd's Pie

Some nights need a dinner that feels like a warm hug, but you don’t want to hover over the stove. That’s when this Crock Pot Shepherd’s Pie steps in. It takes the classic comfort food and makes it delightfully hands-off, so you get rich, savory flavor with barely any fuss.

Ingredients

Here’s what you’ll need for a 6-serving meal. Have your favorite mashed potato recipe ready, or use store-bought mashed potatoes to keep things extra easy.

  • 2 pounds lean ground beef (or ground lamb)
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 tablespoons tomato paste
  • 1 cup low-sodium beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 cups frozen mixed vegetables (peas and carrots work great)
  • 1 teaspoon dried thyme
  • Salt and black pepper
  • 4 cups prepared mashed potatoes

Method

  1. Heat a large skillet over medium-high heat. Brown the ground beef with the onion for about 6 minutes, breaking up the meat with a spoon. If you’re using lamb, you can do the same. Once the meat is no longer pink, stir in the garlic and cook for one minute more.
  2. Sprinkle the flour over the meat and stir until it disappears. Add the tomato paste, broth, and Worcestershire sauce. Scrape any browned bits off the bottom of the pan; this is where the flavor hides.
  3. Transfer the whole mixture to a 6-quart crock pot. Stir in the frozen mixed vegetables, dried thyme, and a pinch of salt and pepper. Cover and cook on low for 3½ to 4 hours, or on high for 2 to 2½ hours, until everything is bubbly and the vegetables are tender.
  4. Spoon the mashed potatoes over the filling right before serving. Gently spread them to the edges, leaving a few swirls on top. Cover and cook on high for 20 minutes, just until the potatoes are heated through. It’s okay if a little filling peeks around the sides.
  5. Take the lid off and let the dish rest for 10 minutes. This helps it set enough to serve neatly.

💡 Note: Simmering the beef in a skillet before the slow cooker is your friend. It ensures a richer flavor and lets you drain off excess fat so the final dish isn’t greasy.

Make-Ahead and Storage Tips

You can brown the meat and chop your vegetables the night before. Keep them in separate containers in the fridge, then add everything to the crock pot in the morning. Leftovers stay good in an airtight container for up to three days, and they reheat beautifully in the microwave.

If you want a shortcut, instant mashed potatoes work surprisingly well here, especially for the top layer. Just make them slightly thicker than the package suggests so they hold their shape on the filling.

At the end of a long day, shepherd’s pie shouldn’t demand a lot of attention. With this crock pot version, a warm, homey meal quietly takes care of itself. Pull out your favorite bowl, scoop up a generous spoonful, and enjoy the kind of dinner that makes you glad it’s Monday.
