Can Rice Go Bad?

Standing in the pantry with a bag of rice whose date you can’t quite remember? It happens to everyone. So, can rice go bad? In short, yes—but cooked rice spoils far sooner than raw rice, and some types of raw rice outlast others. The good news is that the warning signs are easy to spot once you know what to look for.

Uncooked Rice: Check the Type First

The biggest factor is whether the grain still has its bran layer. White rice—including basmati, jasmine, and standard long-grain—has been milled to remove the bran and germ, leaving little for bacteria or mold to feed on. Stored in an airtight container in a cool, dry place, it keeps for up to two years or more with no obvious change in quality.

Brown rice is a different story. Its germ still contains natural oils that can turn rancid over time. In the pantry, brown rice stays fresh for about 3 to 6 months. To keep it longer, store it in the refrigerator or freezer; cooler temperatures slow down the oils from going bad.

How to Tell If Uncooked Rice Has Gone Bad

Before you cook, give the rice a quick look and a sniff. If anything seems off, it’s safer to toss it than to gamble.

  • Pests: fine webbing, tiny beetles, or weevils in the bag mean it’s time to throw it out.
  • Smell: a rancid, sour, or musty odor means the natural oils have turned.
  • Moisture or mold: damp clumps, fuzzy spots, or odd discoloration signal that moisture found its way in.

Cooked Rice: Follow the Two-Hour Rule

Cooked rice will not last on the counter. It’s moist and low in acid, which makes it inviting to Bacillus cereus, a bacteria that can cause food poisoning. Food safety experts recommend refrigerating cooked rice within two hours after cooking. Spread it in a shallow container so it cools quickly, then keep it in the fridge for up to 3 to 4 days.

You can freeze cooked rice for 4 to 6 months, too. Just let it cool completely, then store it in a freezer bag or sealed container.

🍚 Note: Trust your senses over the calendar. If cooked rice smells sour, feels slimy, or shows any mold, skip the taste test and toss it.

You don’t need to stress over that bag of rice in the back of the pantry. Keep raw rice dry and sealed, get cooked rice into the fridge within two hours, and give everything a quick check before cooking. When you’re unsure, a fresh bag is a small price for peace of mind.
