Brussel Sprouts And Pancetta

Brussel Sprouts And Pancetta

There are few side dishes that deliver so much satisfaction for so little effort as Brussels sprouts and pancetta roasted together on one baking sheet. The sprouts turn sweet and caramelized at the edges while the pancetta crisps into salty, irresistible bits. This version needs only a few ingredients and about half an hour, which makes it just as welcome on a Tuesday night as it is on a holiday table.

Since pancetta is already seasoned, you don’t need much salt here. A little black pepper and a bright squeeze of lemon at the end are what make the dish taste complete.

Ingredients

  • 1½ pounds Brussels sprouts, trimmed and halved lengthwise
  • 4 ounces pancetta, diced into ½-inch pieces
  • 2 tablespoons olive oil
  • ¼ teaspoon kosher salt
  • Freshly ground black pepper, to taste
  • ½ lemon, for serving

Instructions

  1. Preheat your oven to 425°F. Arrange a rack in the center position.
  2. On a large rimmed baking sheet, toss the Brussels sprouts, pancetta, olive oil, salt, and several grinds of pepper. Spread everything into a single layer — if the sprouts are crowded, use a second sheet so they brown instead of steam.
  3. Roast for 15 minutes. Stir the mixture, then continue roasting for another 10 to 15 minutes, until the sprouts are tender and deeply golden in spots and the pancetta is crisp. Watch the pan during the last few minutes; smaller sprouts may finish sooner.
  4. Remove the pan from the oven and squeeze the lemon half over the top. Taste, add more pepper if you like, and serve warm.

🧂 Note: Go easy on the salt — pancetta is already quite salty. You can always add a pinch at the end if it feels flat.

Leftovers keep well in an airtight container in the fridge for up to three days. Reheat them in a 375°F oven until the edges crisp up again; a microwave will make the sprouts soggy. If you can’t find pancetta, swap in four slices of bacon, sliced crosswise, and skip the added salt.

The takeaway is simple: high heat, one pan, and a final citrus squeeze. It’s the kind of dish that tastes like more effort than it really took — and that’s exactly why you’ll make it again.
