Best Cheddar Cheese

Best Cheddar Cheese

Some dairy decisions barely slow you down; choosing a wedge of cheddar can feel impossible. The best cheddar cheese isn’t one magical block. It comes down to age and milk quality. Once you learn to read those two things, the dairy case feels a lot more approachable.

What to Look For

Age is the main difference between mild, sharp, and extra-sharp cheddar. As cheddar ages, it loses moisture, which makes the texture crumblier and the flavor more intense and complex.

  • Age: Mild cheddar is usually aged 2 to 3 months, medium about 6 months, sharp 6 to 12 months, and extra-sharp at least 12 months. Pick extra-sharp if you like a strong, lingering bite; pick mild if you prefer something smooth and gentle.
  • Color: Color has little to do with sharpness. Some orange cheddars get their hue from annatto, a natural seed-based colorant, while others owe it to beta-carotene from grass-fed cows. White cheddar is simply cheese made without coloring.
  • Pasteurized vs. raw: Pasteurized cheddar is the safest choice for everyday cooking and is the right pick for pregnant women, young children, older adults, and anyone with a weakened immune system. Raw-milk cheddar can have more complex, earthy flavor, but those groups should skip it.

The Cheddars We Keep Buying

These four are dependable, widely available, and each one excels at a different job in the kitchen.

Tillamook Vintage White Extra SharpDense, sharp, slightly crystallineCheese boards and burgers

Cabot Extra Sharp is our everyday workhorse. This Vermont co-op cheddar is aged for at least a year, giving it a confident tang and a slight crumble, yet it still melts into a smooth sauce without turning greasy.

Kerrygold Aged Cheddar is the one we cube for snacking. Because the milk comes from grass-fed Irish cows, the block tastes creamier and more buttery than many sharp cheddars, with a sweet, grassy note that melts especially well.

Tillamook Vintage White Extra Sharp is for sharp-cheddar purists. It’s dense and bold, with a savory finish and tiny white crystals that add a pleasant crunch. Serve it at room temperature on a cheese board, or shave it over a burger.

Fiscalini Bandage-Wrapped Cheddar is our splurge. The cloth rind lets moisture escape slowly as the cheese ages, creating an earthy depth you won’t find in plastic-wrapped blocks. It takes a little more effort to find and costs more, so save it for a slow afternoon with good bread.

How We Chose

We tasted every sample at room temperature, since cold dulls flavor, and we looked for consistent quality, fair prices, and good behavior both on a board and in a hot pan. Remember that “best” is personal, though. If a pick tastes too young or too aggressive, try a different age rather than writing off cheddar altogether.

Next trip, buy one mild and one extra-sharp block, cube them, and wait about thirty minutes before tasting. Notice the texture as well as the bite. That simple side-by-side comparison will teach you more than any label—and it makes a very pleasant snack.
